Baking challenge

This Christmas/birthday I was given six cook books. I love them all. I have many recipe books already-the meal kind, so it’s wonderful to have cake books-with technical detail or gorgeous photos. I want to set the kMix and
Myself a challenge. I want to bake my way through the books. I know. I know. It’s been done (Julie and Julia) but I want to learn to make bread, butter, croissants, perfects pies, tarts, pasties, eclairs, millefeullies and to recreate the stunning tray bakes.

This could cause a little weight gain… So I won’t do sweets everyday. But I love b to have a homemade cake/biscuit in her lunchbox each day rather than a processed biscuit. And Ben loves (absolutely and more than is normal for a 2year old boy…) chocolate. So it’s only fair this baby bump has the best start and gets the benefits of chocolate, desert and good home
Cooked food whilst growing;)

I know I usually don’t complete challenges that I set for myself. Something about my personality not being a starter/finisher (sigh) but I just realised that its been a delightful year of blogging: I wrote 134 blogs in 365 days. That’s a completion of something…. We were chatting about it on Christmas eve and that it’s been quite a fun way of documenting my 29th year. Then we tried to work out what I did with my time before I blogged. I couldn’t work it out ;) so glad I enjoy writing:)

My only rule is that I have to bake with items in the house. So if it’s a cooking/baking day and I have no eggs well then it’s a no egg recipe. (lol. My rule is funny-I live this way!) I hope that over the next 20 weeks I learn to make perfect bread and so much more. I will try post more photos to document my

Cake.

This week I have been baking. Not just cakes for home or visitors but for the Church Coffee Shop – King Cup. Well….. the order was for 9 cakes. Of my choice.

So I did a facebook ask: what’s your favourite cake.

and everyone loves cake. I don’t have a favourite cake. I actually like all cake (as if you didn’t know!) Some are sweeter than others, and some are easier than others. But I love it ;)

So I decided on the classic Victoria Sponge, The Hummingbird Carrot Cake – with Cream Cheese Frosting, Rich Coffee Cake, and then I don’t know what to make the remainder…

Chocolate Fudge took my fancy. I could do a Lemon/poppy seed bundt cake. Some people suggested Marble Cake. But I’ve never tried to make it, and not sure I should try it for sale first ;) Have you made it? Have you a favourite cake? what is it…?

On another slice of cake news – a lovely friend form Church gave me the most GORGEOUS chocolate brownies on Sunday. They are the best recipe ever. Hope she shares – with chunks of chocolate. Thanks for thinking of me xo

Easy Macaroon Recipe

I love watching ‘The Great British Bake-off’ do you? If you haven’t seen it, catch up here

Last night was the Biscuit Bake-off. They made Brandy Snaps (so have I…!), and any kind of other biscuit, I will try some of theirs in the future, and then Macaroons. Lovely macaroons! French Meringue macaroons and Italian Meringue
Macaroons. I watched so carefully and thought I’d bake them.

Here I am after 12 hours and cannot remember what to do… So I googled: macaroons. And whatever happened to the simple recipe? It looked so so so complex. The best one I found was here on BBC Food.

The only problem with this recipe is that I don’t have almonds atm. I used them all last week (it was a really, really sad and unsuccessful bakewell tart attempt). So I had to substitute plain flour for almonds (it works!)

And the recipe tells you to do things in a particular order – which meant that the sugar syrup solidifies whilst you whisk egg whites. Which I was really disappointed by. So had to remelt the sugar. Which took more time, more water… etc. So this is what you should do to get Macaroons that look divine:

 

Ingredients (this is adapted from the recipe I linked to above)

125g  Icing Sugar
125g Plain Flour (use more at the very end if it’s too sticky….)
90g egg white
2 tbsp water
110g white sugar

Butter cream for icing the top with a number 1 tip. 1/3 butter to 2/3 icing sugar and I used some lemon juice.

  1. To get started: heat oven to 170oc mine is fan assisted and so I put it between 150-170.
  2. In the food processor I whizzed the icing sugar and flour with the blade attachment. Added 1/3 of the egg. And whizzed until it was a paste (take a few minutes!)
  3. In a clean bowl whisk the remaining egg whites until they PEAK. Use an electric mixer!
  4. Now get your pan and add the water and sugar and mix until it is syrupy took me about 5 minutes of stirring.
  5. Add the sugar syrup to the egg whites and get whisking….. :)
  6. Then pour the mixtures together, and stir until it is done. And it should be all shiny :) I had 3 colours so needed three bowls, I added strawberry essence and pink colouring to one batch, should have added coffee (2tsp and boiling water mixture) and one plain.
  7. Turn the piping bag inside out and put into a glass/jug and then load the bag up with mixture. Space them out as below: They will have a tiny peak on, but as shown in the program last night, bash the tray down 2-3 times and they will go flat. Wait 20 or so mins before putting them into the oven to cook. I left mine to cook for 10 mins. But I always check them, and had to add batches into the oven so it could have been longer (though I doubt it!)

I whisked up the butter cream and had fun with the nozzle with swirls then sandwiched them together!  And sprinkled them with Divine Deli’s anow white gorgeous glitter – Delicious!

The Best British Scone (ever!)

My favourite recipe for Scones based on the Bero book (40th edition page 5)

Heat oven to 220 degrees c. Greese baking tray (or 2). Mix 225g SR flour with pinch of salt and rub in 50g of margarine (cheat by whizzing it in the food processor with metal blade). Stir in 50g sugar and 50g optional dried fruit. I like cranberries or cherries – not a scone really then, but way more delicious than raisins!

Add 1 medium egg and toll onto floured surface til it is 2 cm deep. use a big cutter – 6cm minimum wide! Roll and re-roll until you have used the dough. If you have left overs then turn into jam tarts – grease a small muffin tin and use a cutter then place in the holes add a teaspoon of jam.

Brush the tops of the scones with milk – really paint it on. They look gorgeous when cooked the more you add!

Cook for 8-10 mins. Keep an eye on them because burning happens at 220 degrees. I usually heat the oven up to 220 o and then turn it down to 180 o when they go in, mine is a fan-assisted oven so it might be different from yours.

Hope they turn out perfect. Then treat yourself to some clotted cream and a dollop of jam….. Delish? Love xox

What I’m reading/baking/doing/thinking

I’ve woken up before everyone else this Sunday morning, it’s been a relaxing Friday and Saturday so far. I realised I hadn’t done any ‘brain’ work so that must be the reason to wake up early. Yes the pot of coffee is in front of me. And no, it’s not lazy sunday – I opened the wrong one, it’s Lavazza and actually tastes quite nice (with a chocolate brownie…. I know… It’s Nigella’s recipe, you want it? wait a minute, here’s the link. They are scrummy. She said to add two chocolate bars. I don’t have chocolate in the house anymore unless it’s a gift, this way it’s still a treat :) Anyways. I did have a ‘polar bar’ for the children’s snacks – it’s a take off of the penguin bar (really) and we squashed that up really small and added two of those and it tastes great as a substitute.  Oh and bc we always add/edit recipes instead of 1 cup plain flour I added 1/4 cup polenta. The grittiness of the polenta/mealie meal (remember I’m married to a Zimbabwean :) ) makes it really special.

A few weeks ago I cut out all of the pieces to make bunting. Beautiful pink triangles with hot pink bias binding, it was for one of Beth’s best friends’ birthday. Anyways. I never got round to making it so I bought some cute as can be but turned out to be ever so small bunting……. I got the sewing machine out the other day to complete the project. Well. What do you know. My trusty Singer 522 had a small problem. Every other time my machine has broken it’s stopped working. Fixed by adjusting tension, rethreading etc… This time was different.  It just wouldn’t stop. I turned the lamp on and off it went whizzing invisible thread. I turned it off, used it’s super power to wind the bobbin, and it was too speedy that it broke the thread. I thought ok it’s obviously the pedal (which during this entire time I hadn’t put my foot on….!) so I pressed the pedal. Then I smelt a nasty, burnt out smell. The pedal was smoking. I threw it outside into the rain. I imagined a fire on the kitchen table, burning my kitchen floor and waking Ben from his sleep. Oh dear. Yes, I think throwing it outside was the best thing to do. Sigh. No bunting. But you’re smiling, right? So now, where can you hire a sewing machine from? That’s right. I totally had a dream that I could hire a machine, and then if the tension goes all crazy, or the pedal just has a mind of it’s own you return it… ;) In the midst of my calls to a Singer repair shop I have found out that my Old Fashioned Singer Machine (the ornament) is from the 1950′s. In what? 40 or so more years it will be a proper antique!

I’m reading two books at the moment (properly) I have a third, but I haven’t got very far so will write about that one another time. I’m reading Anna Smith’s: ‘Meet Mrs. Smith’ again. I love her heart for her family, her love for justice and the way she and her husband have compassion and act upon it to change situations. She writes about the reality of family life – ie leaving the house with toddlers in such a compelling way that I’ve been laughing at it even though it’s a daily reality!

My second book is more a devotional book: ‘Barefoot in the Kitchen’ by Alie Stibbe. A friend bought this book for me when Bethany was little and reading it now Ben is ‘little’ (oh he is, even though he has such l-o-o-o-n-g legs). The chapter on a simple life reminds me of another book I dip into entitled something like ‘how to live a simple life’ which crudely summed up refer to a life emptied of clutter. Cupboards, wardrobes and junk are all in order – so to reflect your inner self.  Must have affected me as yesterday I cleaned out the bureau, the under-stairs cupboard and under Beth’s bed. Well, all of this is good to have your house in order, so to speak. And to have your heart in order. But I’m not yet feeling the connection. I am sure I will when I can’t find {anything I’ve lost} and it is neatly put away saving me time? Energy? Anxiety? We shall see. I did however find a cute red coat that I had forgotten about, and a baby sling – which I was certain I’d given away ;)

Alie’s book is a series of short devotionals and I am now reading a chapter on ‘Lord of the Pots and Pans’. She writes about St Benedict and how he urged the cellerar to ” provide the brethren with their regular allowance of food, without fuss or keeping them waiting, so as not to make for them an occasion to sin”

The Alie writes:

If the kitchen had become my holy ground, the the cooker and sink that I worked at and the table where we ate were my alter. Similarly, the pots, pans, cutlery and crockery were the holy vessels – and I should treat them as such.

I have been reading and re-reading this, trying to make better sense of it! Well, I get it. My life as a Mum isn’t just about raising happy, contented, enthusiastic, educated, delightful children  - which I really enjoy doing. It’s about every area of my life for the glory of God. The washing up? The cleaning? Joel Osteen talks about the same kind of thing as he urges you to wash your car, keep your house clean, be the best you can as God has given it to you to steward/look after! I want to do the best with all  I have been given. The ‘talents’ that God has entrusted to me. I want to be like the one in the parable of the talents who invests wisely, and does a ‘good’ job to make their Master proud and to have a good return for their work! I want to be rather like the one who doubled what God gave and then was given more. Not just doubled it like one of them in the story. Nor do I want to hide what I have in the ground and make up an excuse about my time, or my effort.

Perfume:

Since our ferry home from France last month I have been looking for the Chanel Chance Eau Tendre perfume. I should have bought it there and then but thought £30 was a bit much (little did I know it’s double that when not duty free!) My Dad just got back from Ukraine and I managed to text him…. and let him know about my perfume choice whilst he was in duty free. He replied saying ‘good to know my daughter still has needs xxxxxx!! OOppssy. I went to work yesterday and saw dad and guess what he pulled out of his bag – a beautiful PINK box of Chanel Chance :) I think that waiting for two months, spritzing myself with Chance everytime I went into Debenhams/perfume shop meant that I wanted this perfume even more than if I’d have just bought it the first time I smelled it! Such a treat! Thank you dad xoxox

Coffee: If I’m at Starbucks it’ll be a Caramel Latte. If I’m home and I’m making it’ll be Lazy Sunday by Taylors of Harrogate –  we used to buy it for special occasions but isn’t every morning a special occasion?

TV: Food network or BBC2′s  Great British Bake Off or anything food related, after watching the programme last night I will definitely be trying to make tartlets today with my children :) Obviously we watch a lot of cbeebies, although I don’t have a favourite show (yet!)  Any favourite tarts/tartlets I should try?

Ben: he is starting to talk and he is so cute! He calls all fruit ‘apple’ even oranges and strawberries. I told him to say ‘strawberry’ instead of “apple” when he was eating strawbs. He shook his head and said “MO! Apple!” Which, incase you didn’t know… ;) means ‘No, apple!’ I try to get him to say thankyou it’s “da- doo” and if you with hold an item waiting for a “da-doo” then he gives you a cheeky smile and a kiss! A kiss! And if he’s delighted with something ie I made him a cup of “apple jus” he will clap his hands, and if particularly thrilled – ie chocolate or cake he jumps up and down and claps.  I LOVE MY SON. Ben (and I) are having a birthday in 5 months’ time. He is 20 months right now. I am 28 and 20 months ;) You see what I did there!? Other new words: Practor (tractor) truck, train, apple, mulk, ‘where is Beth’, ‘ssssh’ ‘door’ ‘dog’ ‘Ellie’ ‘house’ (which actually means lounge!) ‘downstairs’ (which also means stairs in general)

Beth: My girl. I love her so. She is learning her writing at the moment. And for the past year or so has done a little bit of copy writing in exchange for an awful lot of chocolate buttons – I should never have started that off! Anyways. We were reading the book ‘hug’. Yes. My girl can read a whole book – ok it only has one word! But then we did drawing from the book, and that meant I had to draw giraffes and a monkey. Um. Don’t you know your Mama can’t draw. BUt bc I don’t want her to say she can’t, I have to have a go…. gosh! You’d have a giggle if you saw the monkey. But the giraffes were ok – I had to write ‘these giraffes love each other there is a rope making them have a cuddle’ Then I had to write ‘I love hugs’ Beth copied this – well, she looked at it and said “I can do that” So she copied it underneath. She wrote I LoVe rugs! It’s the sweetest piece of writing she has ever done. No finger spaces. All on one line. Totally gorgeous. And in my eyes. It’s PERFECT! ( I will photograph it).

Is it coincidental that Ben is learning to talk and Beth is learning to write/read at the same time? My children are making sense of the world and it is a delight to watch them. As a mum, as someone who was a teacher, as one who loves to talk, read and right I am super proud – and I smell Lovely ;) Have a wonderful day too! With all of your favourite things – dashing off as Ben is about to unload the dishwasher….. yes. he. is! x

 

Sweet desert

Yesterday I had to come home early from Church with Ben, as he was beyond tired. You know the kind where you can’t do anything with them to make them happy, and they need bed. That’s all! Well. I came home and he slept.

Then I got some dinner ready. Then I realised we have left over strawberries. And I had a few eggs…

2 egg whites + 3 tablespoons of white sugar = pavlova

I whisked up the egg whites till they peaked. Then added a spoonfull of sugar and whisked some more (x3). Then turned the oven onto 180 degrees c. You are meant to turn it down to 140 ish on putting the merringue in. OOps. I forgot.

And the result was after 15 mins the most beautiful browned merringue I have ever dreamed of creating! I turned the oven off and left it for an hour or so.

Later, when the bs were asleep I spooned yoghurt and icing sugar into a bowl (about 1/4 tub greek yoghurt and 1.5 tbsp icing sugar) and mixed it til it was smooth and spooned it onto the pavlova. Then added loads of strawberries on top. And as we had a flake left I crumbled that ontop.

It was a lovely, delicious, sweet desert. What to make today? We are having one of our lazy days. But for us that means laundry and baking!

(C) this is my recipe. I made it up. I used to use Delia Smith’s recipe to the tee. But I now use this one. If you use it let me know how it goes. It will make 4 portions. Double it for more ;) x

We don’t have to be anywhere. So we can bake :)

Day One of the holidays, we went to my aunty and uncles farm in Shropshire, it was so lovely, brought back memories of when I was little and my cousin Sarah let me sit on her horse. Bethany was so excited to see the ‘ponies at the farmyard!’ and she got to sit on a horse, my cousin offered Ben the chance too, but we thought he is too wriggly (sorry buddy, but you are!). She LOVED it. Part of her prayer last night was ‘thank you God for making horses and ponies….. Love it! She also made a space rocket out of milk cartons with my sister. Which she paper machee’d ALONE! However we all ended up covered in flour paste.

How to make paper mache paste: Get a massive bowl. Pour a cup of flour (any kind, I’ve used SR flour, and today we used Sainsbury super strong white bread flour – needs using up) then add LOADS of water, about 3 big glasses full. whisk, whisk, whisk until it’s like milk. Get your old newspaper and cut into 10cm by 5 cm rectangles. Dunk it in the mix and apply to your creation. Obviously It will need a few coats and maybe some help from yourself. But Beth can get all gloopy and stick the paper bits onto the plastic space ship herself…

Day Two: Today, Ryan still in London recording the last bits on the album… eeeeekkkkkkk sooo exciting to be almost near hearing the songs almost completed!!! Beth woke at 4am, worried about where we put the space ship (I know… early huh!) Then Ben decided 5am was the new 7am. Thankfully they all went back to sleep til 8am. They obviously got the memo about lie ins in the school holidays! ha ;)

Now. I have seen a lot of Whoopie Pies. Starbucks et al have them on display. I have never ever made them. I have found blogs that are devoted to them. Who wouldn’t want to eat one of these:

Don’t they look delicious? Well. After extensive research. It says to make a chocolate cake batter and then pour in 1/4 cup mounds  onto a baking sheet. Not too tricky then?? But my batter mix for cakes is usually pretty runny. So I am going to use the recipe from: www.goodtoknow.co.uk .

Right now they are baking in the oven and they smell delish, we have chocolate whoopies and strawberry whoopies. Then batch 3 is the vanilla. I can imagine them looking lush on a plate altogether. Now to wash up, make the icing and toppings and then………. sit down with a cuppa and enjoy! Have a wonderful holiday with your children – if you have them, and enjoy the summer! Love A xox


Mould… how to get rid of mould ;)

Welcome to the most housewifey post I have ever written… well, it’s about cleaning. Removing mould and succeeding. Of course I prefer baking to cleaning. Infact I prefer baking to a lot of things ;)

Well I baked a new coconut cupcake, a cocoa cupcake (with squidgy moist chocolate – bliss!) and my old faithful Vanilla bean. A friend is coming tomorrow to talk wedding cupcakes (yelp. YES. How fun! :) ) So I had to get some samples ready!

OK. the mould. You know how things happen repetitively in my life. And make me notice. Well, I emptied one of the last few boxes from when we moved (I know, I know it was 18 months ago. But I was 42 weeks pregnant. So some stuff just got left.) Well, I had such a hard time going through this box, some special photos had mould on them. Yes, gross old mould. A box of special bits had found their way to the garage. We didn’t know they were there. I hadn’t been looking for them, but when I found them I realised how sad I was… OK well. Old fashioned photographers can fix this :)  Answer numero 1!

As if that wasn’t bad enough, I went to do some laundry and one of my favourite dresses for Beth was still in the washing machine (who knows why, perhaps it’s my very clean and tidy son who LOVES tidying things away into the washing machine) well. I opened the machine and thought ‘gosh not that smell again’. Then realised there must have been a wet flannel or something and that had caused this beautiful dress to get a speckle of mould. I soaked it on Oxy Clean for an hour or two. Nothing. Got some fairy liquid out to scrub it off (isn’t it meant to be amazing????) Nothing. Then I diluted chlorine bleach – didn’t want to fade the dress. And. Yes, majority of the speckles came out. After a nice wash at 40 degrees it’ dried just fine :)

And thirdly. I came to quickly clean my bathroom again (remember)… And then I realised we have family coming to stay, so I wanted it to be really, really clean! So I got the grout cleaner out. No joy. You know for those stubborn bits around the silicone? Tried the fairy liquid again. Nada. Went online and read a few reviews for expensive grout cleaning products (I actually have one. It doesn’t work :( ) But, one tip on martin’s money saving review said:

Pour bleach around the grout/silicone and then put kitchen towel on top. Leave for 3 hours.

I did this after putting Ben to bed at 6pm, a while later I walked up stairs and was like ‘oh no, what’s the bleach smell?’. Then went to the bathroom and couldn’t believe it. The white silicone is perfectly white – ONLY where there is kitchen towel on top. How amazing. What a clever way to clean the nasty off when scrubbing doesn’t work, wonder why it didn’t work where there wasn’t any kitchen roll?

I told you it was a housewifey topic. In the midst of all the fun things I get up to mould came to upset me. My house isn’t damp – but I found some ways to clean it and thought you might want to know! Loving my clean bathroom and sweet smelling cupcakes ;) xox
